Food Safety and Local Food

This paper addresses the industry challenges of insuring local food comes from safe sources. The paper outlines the Hazard Analysis & Critical Control Points (HACCP) principles for food safety, and lists an Ontario based example of insuring safe food without being HACCP certified. The authors have provided progress bring made and some solutions to local food being purchased and sold publically.
