Terroir is roughly translated to mean “sense of place.” Like wines and champagnes, the geography, geology and climate of a place can be expressed in the flavours and textures of the food produced there. More and more regions in Ontario are discovering their own terroir and promoting their region as a “food destination” by bringing together local farmers and chefs to celebrate the tastes of the season. Culinary tourism is not only a way of strengthening local food awareness and networks, but also a possible source of economic development. Chefs play an important role in growing this awareness by highlighting local flavours with their skills.
